Pumpkin Monkey Bread

Margaret's Pumpkin Monkey Bread with Cream Glaze

If you are going to make one recipe this fall, this is it! I've made this monkey bread for my colleagues at work, Thanksgiving dessert, or for my fiancee' on football Sunday. Around this time every year people ask me to make this for them, so below is the recipe. It's quick and easy, and is great to warm up the next day! Subscribe for more fall recipes!

Cook Time: 35 mins
Total Time: 50 mins
Yield: 1 Monkey Bread (10-15 people)

Ingredients:
Pumpkin Monkey Bread
1/2 cup granulated sugar
2 tablespoons pumpkin pie spice
1/2 teaspoon cinnamon
2 cans of regular sized Pillsbury Biscuits (I use the Flaky Layers)
1 cup light brown sugar
1/2 cup unsalted butter (1 stick)
1/2 cup canned pumpkin puree
4 oz cream cheese
1/2 teaspoon vanilla extract
Glaze
1 1/2 cups powdered sugar
2 tablespoons milk

Directions
Monkey Bread
1. Preheat oven to 350F and spray a Bundt Pan (I bought mine from amazon Link Here ) with Pam or cooking spray.  
2. In a plastic bag, mix the sugar, pumpkin pie spice, and cinnamon in a plastic bag and set aside.
3. Cut the uncooked Pillsbury Biscuits into quarters, roll into balls, then throw into plastic bag with spices. Shake the bag ensuring to coat biscuits evenly. Place spiced dough balls into bundt pan evenly and set aside.
4. In a small saucepan, place light brown sugar, butter, pumpkin puree, cream cheese, and vanilla in a saucepan on medium heat until melted. Whisk mixture until it's smooth, make sure you don't boil mixture.
5. Pour mixture over biscuits and bake for 30 minutes, then let cool for 10-15 minutes. 
6. Once cooled, put a plate on top of bundt cake pan, and flip over monkey bread onto plate.
Glaze
7. While monkey bread is cooking, whisk together powdered sugar and milk until smooth.
8. Once bread is out of oven and flipped onto plate, drizzle glaze over monkey bread and serve immediately. Leftovers are okay to stay out, but make sure to cover. Enjoy!!

Tips: I personally like to make this the night before I want to serve it because the bread soaks up the glaze and sauce, then microwave a portion for 30 seconds.
